Oven Baked Sweet Potato Fries

  Ingredients: 1 large rutabaga 1/2 cup butter 1 pound ground meat 1 cooking onion 4 cloves garlic 2 cups peas and carrots (or any combo mixed veg, corn is popular) 1/4 cup bbq sauce 2 tbsp Worcestershire sauce 1 tbsp salt Cooking oil Tools: Saucepan, frying pan, colander, 8" by 8" baking dish Instructions: Peel and cube one large rutabaga Put cubed rutabaga in saucepan and cover with water Add pinch of salt, heat until boiling Reduce heat and let boil for a full 30 min While it is boiling, heat some cooking oil in a frying pan, dice 1 cooking onion and mince 4 tbsp garlic Sauté garlic and onion until fragrant and onion turns translucent Add 1 pound ground meat and cook until browned Add 1/4 cup bbq sauce and 2 tbsp Worcestershire sauce, toss until mixed, then remove from heat Preheat oven to 350 F Once cubed rutabaga has finished boiling, test for tenderness. Butternut Squash Soup

  Ingredients: 1 butternut squash 1 quart stock (chicken or vegetable) 2 tbsp olive oil 1 onion 1 carrot 1 rib of celery 1/2 tbsp minced rosemary 1 tsp grated ginger 3 cloves garlics Salt and pepper to taste Special Equipment: Immersion blender Instructions: Preheat oven to 450 F Cut squash in half and remove seeds Place in baking pan and cover in a small amount of olive oil Bake in oven with skin sides down for 45 min Meanwhile, on the stove, put 2 tbsp olive oil into a pot Dice onion, carrot and celery and place in pot Stir and cook for a few min until slightly soften and fragrant Add 1/2 tbsp minced rosemary, 1 tsp grated ginger, and 3 cloves minced garlic Add 1 quart stock and bring to a simmer Take squash out of the oven and let cool until you can touch it Peel squash and cut into large cubes Add squash to pot Let simmer until vegetables are soft Take immersion blender and blend until smooth.   Ingredients: 2 tbsp butter 1 onion 2 tsp garlic (2 cloves) 1 tbsp grated ginger 1 tsp chili powder 1/2 tsp turmeric 1/4 tsp ground cinnamon 1 can diced tomatoes (I use crushed tomatoes) 2 tbsp tomato paste 1 tbsp brown sugar 1/2 tsp salt 1/4 tsp black pepper 2 chicken breasts 1/3 cup cream 1/4 cup sour cream or plain yogurt 1 cup basmati rice Instructions: Prepare rice in rice cooker or pot While it's cooking, chop 1 onion, dice 2 tsp garlic, grate1 tbsp ginger Mix 1 tbsp ginger, 1 tsp chili powder, 1/2 tsp turmeric, and 1/4 tsp cinnamon in a bowl and set aside Chop up 2 chicken breasts into cubes Pan fry cubed chicken breasts until cooked through and set aside Melt 2 tbsp butter in a deep skillet over medium heat Add onion and garlic to skillet Cook, stirring frequently until onions are tender, about 5 min Add spice blend, mix, and cook for another minute Add 1 can of diced or crushed tomatoes, 2 tbsp tomato paste, 1 tbsp brown sugar, 1/2 tsp salt, 1/4 tsp black pepper Mix until...

Ingredients: 4 lb pork shoulder (sometimes called the butt) 1/2 cup brown sugar 1 tbsp salt 1 tbsp paprika 1 tsp garlic powder 1 tsp onion powder 1 tsp cumin 1 cup bbq sauce (or ketchup) 1/3 cup apple cider vinegar 1/2 cup dijon mustard 2 tbsp Worcestershire sauce 1 white onion Special Tools: Slow cooker Instructions: Put pork shoulder into slow cooker, set on low for 9 hour preparation or high for 6 hours In a bowl, combine 1/2 cup brown sugar, 1 tbsp salt, 1 tbsp paprika, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp cumin Dice onion In another bowl, combine 1 cup bbq sauce, 1/3 cup apple cider vinegar, 1/2 cup dijon mustard, 2 tbsp Worcestershire sauce and diced onion Combine wet and dry ingredients together until mixed Once the pork shoulder has been cooking on low for 6 hours or high for 4 hours, add the sauce to the slow cooker Pull apart meat with two forks until they are thin strips and thoroughly coated with sauce Let it all cook together for another 3 hours on low or 2 hours...

  Ingredients: 1/3 cup chopped green onion 1/4 cup lime juice 2 tbsp olive oil 2 tbsp soy sauce 2 tbsp honey 1 tbsp grated ginger 2 tsp minced garlic 1/4 tsp cayenne pepper 2 tsp allspice 1 tsp thyme 1 tsp salt 1 tsp black pepper 1/2 tsp cinnamon 1/2 tsp nutmeg 1 kg chicken thighs Instructions Mince 2 tsp garlic, grate 1 tbsp ginger, and chop 1/3 cup green onion In a medium bowl, mix together all ingredients except chicken thighs (1/3 cup chopped green onion, 1/4 cup lime juice, 2 tbsp olive oil, 2 tbsp honey, 1 tbsp grated ginger, 2 tsp minced garlic, 1/4 tsp cayenne pepper, 2 tsp allspice, 1 tsp thyme, 1 tsp salt, 1 tsp black pepper, 1/2 tsp cinnamon, 1/2 tsp nutmeg) Add marinade to sealable plastic bag or container Add chicken to marinade, making sure that it is fully coated Let marinate over night Cook on grill or pan fry for about 15 min, turning occasionally.   Ingredients 2 tbsp butter or oil 2 chicken breasts 1 onion 4 cloves garlic (1 tbsp 1 tsp), minced 1 tbsp curry powder 1 can coconut milk (size: 13 1/2 oz) 2 tbsp honey 1 lime (2 tbsp) juice 1/4 tsp salt Hot sauce optional 12 basil leaves, chopped (optional) 1 cup basmati rice More veg as desired Instructions Prepare basmati rice. I have a rice cooker and use 1 cup rice to 2 cups water. If you don't have one, use a pot and boil on low until the rice has absorbed the water.
