Black Bean Burgers

Ingredients:

  • 2 cans black beans
  • 1 1/2 cups breadcrumbs
  • 2 eggs
  • 1 onion
  • 1/2 tsp chili powder
Instructions:
  1. Preheat oven to 375
  2. Drain and rinse 2 cans black beans
  3. Dice 1 onion
  4. Put black beans on a baking tray and bake for 15 min to dry them. Leave oven on
  5. After beans have dried, put them in a bowl and mash them. Feel free to leave them chunky
  6. Add 1 1/2 cups breadcrumbs, 2 eggs, diced onion, and 1/2 tsp chili powder
  7. Form into patties and bake them in still-heated oven for 20 min
Yield: 8 patties

For such an easy recipe, I've certainly had some difficulty with this one. For some reason most online recipes, including the one I linked, think they can get by with one egg and one cup of breadcrumbs. I find that you absolutely need two eggs and at least an extra half cup of breadcrumbs to properly bind everything together so the patties stay intact.

Most recipes say you should bake the patties, but I found one that suggested to grill them and because that's what I would do if they were beef, I figured I'd do it that way if I can get away with it. I find the patties are still more delicate than if they were beef, and more vulnerable to cracking and crumbling. Maybe next time I'll try baking again.

We didn't have burger buns, so I'm just using (homemade) bread in the pic that I'm uploading. I know that's upsetting. I might update it one day.

I first tried black bean burgers when I was attempting vegetarianism in Katimavik. Back then I simply thought of them as a replacement for meat, not a dish of their own, and so I dressed them up like I would a hamburger, with mustard and stuff. I do remember liking them, even if they didn't taste like beef, and feeling they were good in their own way.

Apparently they're South American, or at least inspired by food from that continent, so they go well with toppings you'd put on other dishes from that part of the world. In this picture I've got sour cream and salsa, and we've put guacamole on them on previous attempts.

I'm always shocked at how the patty material looks like chocolate chip cookie dough before cooking.
