Butter Chicken
Ingredients:
- 2 tbsp butter
- 1 onion
- 2 tsp garlic (2 cloves)
- 1 tbsp grated ginger
- 1 tsp chili powder
- 1/2 tsp turmeric
- 1/4 tsp ground cinnamon
- 1 can diced tomatoes (I use crushed tomatoes)
- 2 tbsp tomato paste
- 1 tbsp brown sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 chicken breasts
- 1/3 cup cream
- 1/4 cup sour cream or plain yogurt
- 1 cup basmati rice
Instructions:
- Prepare rice in rice cooker or pot
- While it's cooking, chop 1 onion, dice 2 tsp garlic, grate1 tbsp ginger
- Mix 1 tbsp ginger, 1 tsp chili powder, 1/2 tsp turmeric, and 1/4 tsp cinnamon in a bowl and set aside
- Chop up 2 chicken breasts into cubes
- Pan fry cubed chicken breasts until cooked through and set aside
- Melt 2 tbsp butter in a deep skillet over medium heat
- Add onion and garlic to skillet
- Cook, stirring frequently until onions are tender, about 5 min
- Add spice blend, mix, and cook for another minute
- Add 1 can of diced or crushed tomatoes, 2 tbsp tomato paste, 1 tbsp brown sugar, 1/2 tsp salt, 1/4 tsp black pepper
- Mix until combined, reduce heat to low, cover and let simmer for 10 min, stirring occasionally
- Add cooked, cubed chicken breasts, 1/3 cup cream, 1/4 cup sour cream or plain yogurt, mixing until combined
- Simmer uncovered for another 5 min
- Serve over a bed of basmati rice
Yield: Enough for two people, with leftovers

This comes from the same cookbook that I got the jerk chicken recipe from. It's a diet cookbook so I wouldn't be surprised if it made a few moves that would leave some people feeling unsatisfied. Chiefly, I think it might have been a little conservative with the butter, I feel like I've heard people complain about butter chicken recipes giving an unsatisfying amount of butter. It also called for low fat cream and light sour cream, although I used standard versions of both.
It asked for 1 cup of onion. I chopped one onion and it was a little less than a cup, but didn't warrant going into a second, so I'd suggest one large onion if you have it. It asked for a can of diced tomatoes, but I used crushed as that's what Lee-Anne prefers. Apparently our cans are bigger than the ones in the US, because it asks for a 540 ml can, while our standard size is 796 ml. So my version might be a little more tomato-based than the intended version.
The original recipe called for a full rotisserie chicken. I'm not likely to have one of those handy though, so I substituted with chicken breast, which suited my purposes.
I don't have a personal story for how I'm connected to butter chicken. It's just a good, hearty comfort food.
