Crispy Basa and Homemade Tartar Sauce


 Ingredients:

  • 1 basa fillet
  • Neutral oil (veg, sunflower, grapeseed, peanut)
  • Breadcrumbs
  • Salt and pepper to taste
  • 1/4 cup mayo
  • 1 tbsp mustard
  • 1 small pickle, diced
  • 1 tsp bbq sauce (or ketchup)
  • 1/4 tsp hot sauce
  • 1/4 tsp paprrika
  • Tinfoil
Directions:
  1. Preheat oven to 375 F
  2. Dice pickle
  3. Brush basa fillet with neutral oil
  4. Combine breadcrumbs with salt and pepper
  5. Sprinkle breadcrumb mixture onto both sides
  6.  Bake for 15 min
  7. While waiting, combine 1/4 cup mayo, 1 tbsp mustard, 1 diced pickle, 1/4 tsp hot sauce, and 1/4 tsp paprika
  8. Serve fish with sauce drizzled on top
Yield: 1 fillet

Description:

Awhile back I copied a bunch of my mother's recipes, which she has on sticky notes on the inside of a cupboard door in her kitchen. Recently I've been trying to avoid carbs, which makes this a difficult resource to use as it's mostly baking recipes. I still wanted to make something from it and I found this one in the mix.

Original recipe called for capers but I didn't have any. It reminded me of a tartar sauce so I used pickle instead. It also called for ketchup, but I hate that stuff and couldn't bring myself to use it even though I'm sure it would be masked by the other ingredients, so I used bbq sauce.
