Yellow Coconut Curry

 






Ingredients

  • 2 tbsp butter or oil
  • 2 chicken breasts
  • 1 onion
  • 4 cloves garlic (1 tbsp 1 tsp), minced
  • 1 tbsp curry powder
  • 1 can coconut milk (size: 13 1/2 oz)
  • 2 tbsp honey
  • 1 lime (2 tbsp) juice
  • 1/4 tsp salt
  • Hot sauce optional
  • 12 basil leaves, chopped (optional)
  • 1 cup basmati rice
  • More veg as desired
Instructions
  1. Prepare basmati rice. I have a rice cooker and use 1 cup rice to 2 cups water. If you don't have one, use a pot and boil on low until the rice has absorbed the water. You can continue with the rest of the recipe while the rice is being prepared
  2. Heat 2 tbsp butter or oil in pan on medium-high
  3. Cube 2 chicken breasts, dice onion, mince garlic, prepare other veg as desired
  4. Cook chicken until done, remove from pan and set aside
  5. Add diced onion and garlic in heated pan and cook for 2 min. Add any other veg at this stage
  6. Sprinkle 1 tbsp curry powder over onion and garlic, cook for 2 min, stirring to combine
  7. Reduce heat to medium-low and add 1 can coconut milk
  8. Add 2 tbsp honey, 1/4 tsp salt salt, and 1 lime's worth (2 tbsp) of juice 
  9. Let sauce heat up until bubbling gently
  10. Add cooked chicken to sauce and let simmer for 2 to 3 min
  11. Stir in 12 chopped basil leaves and hot sauce
  12. Serve over basmati rice
Yield: Enough for 2 hungry adults

Description:

This is a simpler dish than the LeBlanc Curry, which I posted previously, so this one gets made more frequently in our household.

We've made some significant edits to the sourced recipe. We substituted shrimp for chicken, we only use one cup of rice instead of two, we added a bell pepper with the garlic and onion, and we omitted the basil leaves. It says to squeeze your own lime, fresh. I just used the bottled stuff.

If I were to have a weekly rotation of dinner meals, and I had to prepare them, this would make the list I think. The others might be: fried rice, stew, chili, enchiladas, pasta, and hamburger soup. Except chili is seasonal and Lee-Anne's doing this low gluten thing, so pasta might be off. But curry always makes the list. It's the third one I've covered from it, having posted recipes for fried rice and hamburger soup. I guess that means you can expect recipes for stew, enchiladas, and chili in the future (I'm not sure pasta needs to be covered)

Curry is just a good, satisfying meal that is pretty balanced and can be made from stuff that's usually around the house, and it tastes nice and distinct.
