Spinach Artichoke Dip


 Ingredients:

  • 1 8 oz pack of cream cheese
  • 1/4 cup whipping cream
  • 2 tbsp grated parmesan
  • 2 tsp finely chopped onion
  • 1/2 tsp thyme
  • 1/2 of a 10 oz package of frozen spinach
  • 1 6 oz jar marinated artichoke hearts
  • 2 tbsp diced pimento
  • 1 tsp Worcestershire sauce
  • 1/4 tsp garlic salt
Special Tool: Little Dipper (came with a slow cooker, it's like a mini version, you can probably make this in a pot on a low heat)

Instructions:
  1. Add 8 oz cubed cream cheese and 1/4 cup whipping cream to Little Dipper or pot
  2. Cover and heat on low until cheese is melted, 30 min to an hour
  3. In the meanwhile, dice 2 tbsp pimento, 2 tsp onion, 6  oz artichoke hearts
  4. Squeeze water out of 5 oz frozen spinach
  5. Once cheese is melted, add rest of ingredients (2 tbsp grated parmesan, 2 tsp diced onion, 1/2 tsp thyme, 5 oz drained spinach, 6 oz chopped artichoke hearts, 2 tbsp diced pimento, 1 tsp Worcestershire, 1/4 tsp garlic salt). Stir to combine
  6. Cover and heat on low for an additional 30 min
  7. Serve with crackers, bread, pita, or cut up vegetables
Yield: Enough for a potluck

Description:

Usually for New Year's Eve, we have a buffet style dinner with snacks that can be eaten throughout the night, as a way of sustaining ourselves to midnight. This is a little silly, because it's not very uncommon for us to be awake at midnight so it's not really an ordeal we have to prepare for. I think this tradition stems from childhood, when being up that late is a novelty.

Anyway, this was my addition for this year. When I got my slow cooker some years ago as a Christmas present, it came with this thing called a Little Dipper. It was like a mini Crockpot and came with its own recipe book. It was cute but I never used it until last night.

The only thing we changed about the recipe was that, for some reason they had different recipes for their spinach dip and their artichoke dip. Usually those two things go together, so we just lifted the artichokes and put them in the spinach dip. I was a little worried that the additional ingredient, plus the fact that we were using a Canadian brick of cream cheese which has an additional 0.8 oz over the American standard, would prove to be too much for the Little Dipper. But it was fine

I think it was better than the taco dip, which I've posted previously. Would definitely do it again
