Orange Cranberry Scones

 


Ingredients:

  • 2 cups flour
  • 1/2 cup sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp orange zest (about 1 orange)
  • 1/2 cup butter, frozen
  • 1/2 cup heavy cream
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup cranberries
  • 1 cup confectioner's sugar
  • 3 tbsp orange juice
Directions:
  1. Whisk together 2 cups flour, 1/2 cup sugar, 2 1/2 baking powder, 1/2 tsp salt, 2 tsp orange zest
  2. Grate frozen 1/2 cup butter
  3. Add butter to flour mix and blend into pea-sized crumbs
  4. Put into fridge or freezer while you prepare the wet ingredients
  5. Whisk together 1/2 cup heavy cream, 1 egg, 1 tsp vanilla extract
  6. Drizzle over flour mixture and add 1 cup cranberries
  7. Mix until everything is moistened
  8. Pour onto counter and with floured hands, work into a ball
  9. Cut into 8 wedges
  10. Brush scones with heavy cream and top with sugar
  11. Put scones into fridge for 15 min
  12. Preheat oven to 400 F
  13. Line baking sheet with parchment paper and place refrigerated scones on it, 2-3 inches apart
  14. Bake for 25 minutes, or until golden brown on the sides and lightly brown on top. Let cool while making the glaze
  15. Whisk together 1 cup confectioners' sugar and 3 tbsp orange juice. Add a little more confectioners' sugar if it needs to thicken a bit more
  16. Drizzle over scones
Yield: 8 scones

Description:

As of this writing, I've never used this recipe. These are a specialty of Lee-Anne's, and while she's made these successfully in her parents house, she had a bit of difficulty with them in ours. This was until we found out that our oven is about 50 degrees hotter than it says it is. After correcting for this, they came out as intended.

The recipe says it makes eight, but there are clearly more, I think about double. So she must have cut them into smaller wedges.
