Apple Cinnamon Waffles

 


Ingredients:

  • 1 cup all purpose flour
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 2 tsp baking powder
  • 2 tbsp brown sugar
  • 2 eggs
  • 1 cup milk
  • 4 tbsp butter
  • 1 apple
  • Cooking spray
Special Equipment: Waffle iron

Instructions:
  1. Core and grate 1 apple
  2. In a large bowl, mix together 1 cup flour, 1/2 tsp salt, 1 tsp cinnamon, 2 tsp baking powder, 2 tbsp brown sugar
  3. In a smaller bowl, whisk together 2 eggs, 1 cup milk, 4 tbsp butter
  4. Make a well in the dry ingredients and mix in the wet ingredients until combined
  5. Fold grated apple into the mixture
  6. Spray waffle iron with cooking spray and pour in mixture until the iron is full
  7.  Cook to your preference using the settings on your waffle iron
  8. Once done, remove waffle from iron and repeat process until you've used all your batter
  9. Top with maple syrup and butter
Yield: It says 4 servings, and I think we got 4 or 5 waffles out of it


Description:

Back when I was single, I bought a waffle iron from a second hand store and had a number of misadvantures with it before ultimately giving up. Eventually, Lee-Anne discovered it and made it work for her. 

Originally she was more of a pancake person but she converted to waffles after her mother made them for her using a similar recipe. This inspired her to experiment with my iron, and now this is a specialty dish of hers.

I've always been on team waffle. The pockets in the checkered pattern allow it to cradle syrup in a way that pancakes just can't. I have more confidence in my ability to make pancakes, and they're easier to make in bulk, but waffles just feel a bit more complete and intentional.

 When I took the photo, I didn't realize I had the knife handle balanced on the waffle. Very annoying, I should no better than to get the knife syrupy.

Lee-Anne used 50% whole wheat flour with the all purpose flour. It worked out well
