Tzatziki

 


Ingredients:

  • 1/2 cup grated cucumber
  • 1 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1/2 tbsp extra virgin olive oil
  • 1 clove garlic (1 tsp)
  • 1/4 tsp salt
  • 1 tbsp dill
Instructions:
  1. Grate 1/2 cup cucumber
  2. Squeeze water out of grated cucumber
  3. In a bowl, combine 1/2 cup grated cucumber, 1 cup Greek yogurt, 1 tbsp lemon juice, 1/2 tbsp extra virgin olive oil, 1 tsp garlic, 1/4 tsp salt, 1 tbsp dill
Yield: More than you need for a meal for two

Description:

We didn't have dill when we made this, but I imagine it's better with it. Dill is great. Most recipes I saw called for fresh dill, but one said that you could substitute with dried, but that you should use less.

Original recipe said that you could add 1 tbsp mint if you wanted to. No idea how I feel about that.

You don't have to bother peeling the cucumbers before grating them.

This recipe makes more than you'd need for a meal for two, so feel free to halve the ingredients if it makes sense.
