Oreo Peanut Butter Tarts

 


Special Equipment: Hand Mixer

Ingredients:

  • 1 1/2 cups heavy cream
  • 8 oz cream cheese
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 2 1/2 Oreo baking crumbs
  • 1/2 cup melted butted
  • Chopped mini peanut butter cups/Reese's Piece/ whipped cream for garnish
Instructions:
  1. Combine 2 1/2 cups Oreo baking crumbs and 1/2 cup melted butter
  2. Press combined mixture into a muffin baking sheet
  3. Add 1 1/2 cups heavy cream to a bowl and blend with hand mixer until peaks form
  4. In another bowl, use hand mixer to blend together 1 cup peanut butter and 8 oz cream cheese until fully combined
  5. Add 1 cup powdered sugar and 1/2 tsp vanilla extract to peanut butter mix and beat until fully combined
  6. Add the whipped heavy cream to the peanut butter mix and blend until fully combined
  7. Add the peanut butter mix to the Oreo tart shells
  8. Let cool in fridge for at least 4 hours
  9. Garnish with your choice of whipped cream, mini peanut butter cups and Reese's pieces

Lee-Anne made these for my birthday this year. Before the pandemic, everyone would get a cake baked for them where I worked. You got to choose the type of cake, and I always chose peanut butter, which was a signature recipe of the organization. Ever since the pandemic though, we haven't been able to eat in the building, even when it's been open.

Lee-Anne wanted to recreate the experience at home but she didn't trust the cake recipe, so she asked if she could make a peanut butter pie. Since I like pie better than cake anyway, this was fine by me. This year she made tarts because I'm trying not to eat as many sweets, and it feels more natural to eat one tart than one slice of pie.

Apparently North America's love of peanut butter is a stereotype of the continent. If this is true, then it's a stereotype I'm happy to fit into.

We had a surplus of filling. Lee-Anne thinks she might cut the amount of cream cheese in half if she tries this again. I think using tart shells instead of a pie shell makes for more crust overall too, which gives less space to fit filling.

We used boxed Oreo crumb, but the source in the link I provided suggests using actual crushed Oreos.
