Soda Bread


 Ingredients:

  • 3 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp salt
  • 1 1/2 cups buttermilk
Directions:
  1. Preheat oven to 425 F
  2. In large bowl, whisk together 1 1/2 cups flour, 1 tsp baking soda, 2 tsp salt
  3. Add in 1 1/2 cups buttermilk, stir until it comes together
  4. Knead and add flour until no longer sticky
  5. Form a ball, cut an "X" into the top and put on a baking sheet. No need to grease it
  6. Bake for 35 min
Yield: 1 loaf

Happy St. Paddy's Day! This recipe is from The Stay At Home Chef. She's also where I got my frybread recipe from, so it seems she has a specialty in simple, no-yeast baking recipes that have an option of raisins that I'll never include.

Other recipes were a bit more complex with additional ingredients like sugar, butter, baking powder, and an egg mixed into the dough, but I wouldn't bother making it much more complicated than this. I might try putting an egg wash on it in the future.

Decided to try this almost as an afterthought while I was letting the Irish stew simmer, and I think it was a success. Soda bread is commonly associated with Irish cuisine. Not far off from The Stay At Home Chef's other recipe that was featured on this blog, since frybread was adopted from the Scottish before it was incorporated into contemporary North American Indigenous food culture.
