Stuffed Peppers

 


Ingredients:

  • 1 pound ground meat (beef, pork, chicken, turkey etc)
  • 1/2 cup long grain rice
  • 1 cup water
  • 6 bell peppers
  • 2 8 oz cans tomato sauce
  • 1 tbsp Worcestershire sauce
  • 3 cloves garlic
  • 1/2 onion
  • 1/2 tsp rosemary
  • 1/2 tsp oregano
  • Mozzarella for topping
  • Salt and pepper to taste
Yield: 4 peppers (8 halves)

Directions:
  1. Preheat oven to 350 F
  2. Prepare rice in rice cooker or prepare in a saucepan, 1 part rice 2 parts water on low until water is fully absorbed
  3. Dice 1/2 onion, mince 3 cloves garlic, grate enough mozzarella to top 8 pepper halves
  4. In a frying pan, cook 1 pound ground meat, diced onion and minced garlic
  5.  Cut peppers in half from the top and remove seeds and membranes
  6. Put halved peppers onto baking dish, hollow side up
  7. In a bowl, mix the browned meat mix, cooked rice, 2 cans tomato sauce, 1 tbsp Worcestershire sauce, 1/2 tsp rosemary, 1/2 tsp oregano, salt and pepper to taste
  8. Fill each of the pepper halves with the mixture
  9. Top with grated mozzarella
  10. Bake 1 hour

Got this recipe from the cookbook Lee-Anne's mother made for her. It's originally from an Allrecipes page but I can't find the original, and we've modified it in this rendition anyway. Original source said to use green bell peppers, we used rainbow. A Google image search shows people using both types so I don't think it's a problem. First recipe had the tops cut off and the insides filled, we cut them in half and had the halves cradle the filling. Instead of using garlic and onion powder, we used fresh versions of each and instead of using Italian seasoning, we used rosemary and oregano. Instead of using long grain white rice we used long grain brown. We used crushed tomatoes instead of tomato sauce. We also topped it all with mozzarella, which wasn't included in the original recipe.

Not much to say about this, it's a fun dish that reformats some basic ingredients in a way that makes it feel a bit different. Instead of stuffing vegetables between carbs, you get to stuff carbs into your vegetables!
