Birthday Peanutbutter Cake

Ingredients: 1 box yellow/golden cake mix 1 box vanilla pudding 4 eggs 1 cup 1 tbsp peanutbutter 1/4 cup neutral oil 1/2 cup butter 1 tbsp vanilla extract 2 cups icing sugar 3 tbsp cream Cake Instructions  Preheat oven to 350 F Grease a cake pan In large bowl, mix together 1 box of yellow cake mix, 1 box of vanilla pudding, 4 eggs, 1 cup water, 1 cup peanutbutter, 1/4 cup neutral oil Mix until smooth Pour into prepared cake pan and bake 25-30 min Icing Instructions: Melt 1/2 cup butter In a mixing bowl, place 1/2 cup melted butter, 1 tbsp vanilla extract, 2 cups icing sugar, 3 tbsp cream, 1 tbsp peanutbutter With hand mixer, blend until smooth Apply a layer to the top of finished cake Yield: 1 cake Source: WALES Cookbook Tips: In the picture there is pieces of Reese's Cups that Lee-Anne froze and then crumbled as topping. Ingredients: 1/2 med yellow onion 2 cups sharp cheddar cheese 1 tbsp cooking oil 1 lb ground beef Cooking oil for frying 1 1/2 tsp onion powder 2 tsp salt 1/2 tsp pepper 2 tbsp tomato paste 1 tbsp Worcestershire sauce 1 carton/4 cups beef broth 1 can diced tomatoes 2 1/2 to 3 cups dried elbow macaroni Instructions: Dice 1/2 med onion, grate 2 cups cheddar cheese Preheat oven to broil on med heat Heat a bit of cooking oil in a large-sided skillet Add diced onion and cook until semitranslucent Add 1 lb ground beef, breaking into smaller pieces Season with 1 1/2 garlic powder, 1 tsp salt, 1/4 tsp pepper Continue to flip to distribute the seasoning until beef is cooked through, about 6 to 7 min Add 2 tbsp tomato paste and 1 tbsp Worcestershire sauce, stirring to combine until tomato paste darkens, about 1 min Add 1 carton or 4 cups beef broth, 1 can diced tomatoes, 1 tsp salt, 1/4 tsp pepper. Ingredients: 1 onion 2 carrots 2 stalks celery 3 cloves garlic 1 inch piece of ginger 1 red chili pepper 1/4 cup cooking oil 1 tbsp curry powder 1 tsp cumin 1 tsp cinnamon 1/2 tsp turmeric 1/4 tsp cardamom 2 cups chicken broth 1 1/2 lbs chicken thighs 1/4 cup red lentils Salt and pepper to taste Instructions: Dice 1 onion, chop 2 carrots, 2 stocks celery, 1 red chili pepper, and mince 1 inch ginger and 3 cloves garlic. Chop 1 1/2 lbs chicken thighs Add a bit of cooking oil to a frying pan. Ingredients: 1 1/2 cups wheat bran 2/3 cup brown sugar 1/2 cup neutral oil 1 large egg 1 cup all purpose flour 1 tbsp baking powder 1/2 tsp salt 1 cup blueberries Instructions: Preheat oven to 375 F Prepare a 12-cup muffin tin with oil or liners In a saucepan, bring 1 cup of water to boil Remove from heat, add 1 1/2 cups wheat bran to boiling water and stir until combined Stir in 2/3 cup brown sugar, 1/2 cup neutral oil, and 1 egg In a separate bowl, whisk together 1 cup flour, 1 tbsp baking powder, and 1/2 tsp salt Combine the flour and bran mixes Fold in 1 cup blueberries Divide mixture between the 12 prepared muffin cups Bake 15-20 min Yield: 12 muffins Source: The WALES Cookbook Tips: Original recipe says to use vegetable oil but I used canola. Ingredients: 3 tbsp olive oil 3 tbsp lemon juice 1 tsp honey 1/2 tsp salt 1 medium bulb fennel 1 small cucumber 2 cups arugula 1/4 cup toasted pine nuts 1/2 cup crumbled feta 1/4 cup fresh basil leaves Instructions: Thinly slice 1 bulb fennel and 1 small cucumber. Julienne cut 1/4 cup fresh basil leaves In a medium bowl, whisk together 3 tbsp olive oil, 3 tbsp lemon juice, 1 tsp honey, and 1/2 tsp salt Add fennel and cucumber. Toss to coat and let sit for 10 min Put 2 cups arugula into a large salad bowl. Ingredients: 1 onion 1 bell pepper 2 tomatoes, or half of a 28 oz can of diced tomatoes 2 cloves of garlic 1 jalapeno pepper 1 14 oz can black beans 1 avocado 1 lime 1 tbsp chipotle peppers in adobo 4 eggs Salt and pepper to taste Cilantro for garnish Cooking oil for frying Instructions: Dice 1 onion, 1 bell pepper, 1 jalapeno, and 2 cloves garlic. Drain and rinse 1 can black beans. Chop cilantro for garnish.   Ingredients: 1 sheet puff pastry (thawed) 2 rashers (6 strips) bacon 1 cup shredded cheddar cheese 1/4 cup grated parmesan 1 tbsp Dijon mustard 1 egg 1 tbsp chopped fresh parsley (optional) Instructions: In a pan, fry 2 rashers (6 strips) of bacon until crispy, flipping partway through Place fried bacon on a paper towel lined plate Preheat oven to 400 F Grate 1 cup cheddar cheese and 1/4 parmesan Unfold puff pastry on lightly floured surface. Baking Cart Nutter Butter Truffles

Ingredients: 1 batch of peanut butter cookies (1 baking sheet, or about 12 cookies) ½ bag chocolate chips (of a 270 g bag) Peanuts, for garnish ½ brick cream cheese Instructions: Put 1 tray of peanut butter cookies into large ziplock bag Close bag and crush cookies Pour cookie crumbs into mixing bowl In a small bowl, microwave ½ brick cream cheese for 30 sec Add cream cheese to cookie crumbs and mix together In rounded tablespoons, scoop onto baking sheet in balls Freeze for a few minutes Pour peanuts into ziplock bag and crush  into crumbs Melt ½ bag chocolate chips in microwave for 1 min Stir chocolate chips, then roll cookie balls in melted chocolate Sprinkle peanut crumbs on top Freeze Yield: 20 truffles Source: WALES member baking cart recipes Description: Before the pandemic, one of the WALES members used to run a baking cart. Ingredients: 3 1/2 cups all purpose flour 2 1/2 tsp baking powder  3/4 tsp salt 1 cup 1 tbsp unsalted butter 1 3/4 cup white sugar 1 tsp lemon zest 2 tbsp lemon juice 15 oz ricotta 1 tbsp 1 tsp vanilla extract 2 eggs 3 1/2 cups powdered sugar 5 tbsp milk Parchment paper Special Tools: Hand mixer Instructions: Grate 1 tsp lemon zest In a mixing bowl, whisk together 3 1/2 cups all purpose flour, 2 1/2 tsp baking powder, and 3/4 tsp salt In a separate bowl, whip together 1 cup unsalted butter, 1 3/4 cups white sugar, and 1 tsp lemon zest until pale and fuffy. Ingredients: 2 tbsp tomato paste 1 tbsp oyster sauce 1 tbsp rice wine vinegar 1 tbsp soy sauce 1 tbsp Worcestershire sauce 1 tbsp brown sugar Instructions: In a small bowl, whisk together all ingredients (2 tbsp tomato paste, 1 tbsp oyster sauce, 1 tbsp rice wine vinegar, 1 tbsp soy sauce, 1 tbsp Worcestershire sauce, 1 tbsp brown sugar) until it reaches a liquid state.   Ingredients: 1 bag coleslaw mix, approx 6 cups 1 bunch green onions 1/2 cup flour 1/2 cup breadcrumbs 1 tsp kosher salt 1/2 cup broth 5 eggs Canola oil Sesame oil (optional) 2 tbsp tomato paste Tonkatsu sauce, for garnish Japanese mayo, for garnish Pickled ginger, for garnish Nori, for garnish Sesame seeds, for garnish Instructions: Dice 1 bunch green onions In large bowl, toss together 6 cups coleslaw mix, diced green onions, 1/2 cup flour, 1/2 cup breadcrumb, 1 tsp salt, 1/2 cup broth, and three eggs. Ingredients: 8 eggs 1 cup milk 1 cup grated cheddar cheese Diced ham to preference Salt & pepper to taste Instructions: Preheat oven to 350 F Grate 1 cup cheddar cheese, dice a slice of ham Crack 8 eggs into large bowl and beat Add grated cheddar, 1 cup milk, and salt and pepper to taste, stirring to combine Prepare muffin tray by greasing with butter/margarine, cooking spray, or using muffin liners Ladle egg mixture into muffin tray Add diced ham to preference Bake for 35 min Special Equipment: Muffin tray Yield: 12 egg cups Source: WALES Cookbook Tips: This makes enough to fill each muffin section to the brim. Ingredients: 4 garlic cloves 1 onion 1 carrot 1 rib celery 1 28 oz can crushed tomato 3 cups broth, matching protein or choice of preference 1/2 tsp thyme 1/2 tsp oregano 1/2 tsp salt 1 tsp pepper 1/4 tsp chili flakes 1 lb ground meat, chef's choice is beef but we used turkey 250 grams frozen spinach. If it helps, that came out to five "spinach portions" for us 1 tsp Worcestershire sauce 2 cups mozzarella or ricotta 220 grams cannelloni noodles, about 1 box Parsley for garnish, optional Little bit of cooking oil Special Tools:  Piping bag or ziplock sandwich bag Tinfoil Immersion blender Directions: Thaw, then squeeze water from 250 grams frozen spinach and set aside Mince 4 cloves garlic, dice 1 onion, chop 1 carrot and 1 rib celery. Slow Cooker Ribs

Ingredients: 2 cups bbq sauce 2 tsp brown sugar 3 cloves garlic 2 tsp Worcestershire sauce 1 tsp cayenne pepper 4-5 lbs baby back ribs Cooking spray Special Tools: Slow cooker Large ziplock freezer bag Directions: Mince 3 cloves garlic In a large ziplock freezer bag, combine 2 cups bbq sauce, 2 tsp brown sugar, minced garlic, 2 tsp Worcestershire sauce, 1 tsp cayenne pepper Seal bag and knead to mix ingredients Add 4-5 lbs baby back ribs to freezer bag. Reseal and shake to thoroughly coat with marinade Spray inside slowcooker and add ribs, topping with half the remaining sauce Cook on high heat for 5 hours, or low for 9 hours Yield: 4-5 lbs of ribs. Tuna Melts

  Ingredients: 1 can tuna 1 med pickle 1 heaping spoonful mayo 2 English muffins 4 processed cheese slices Black pepper to taste Instructions: Set oven to broil at med-high heat Drain 1 can of tuna and put into bowl Dice 1 med pickle Add diced pickle to bowl with tuna, along with a heaping spoonful of mayo and black pepper to preference Mix until integrated, adding more mayo if needed Cut 2 English muffins in half and set on a baking sheet facing up Spoon out tuna mix onto each English muffin half, distributing evenly Place a slice of processed cheese on each and place in oven Broil for 10 min, or until the cheese develops leopard spotting Yield: 4 tuna melts Source: Conventional knowledge Tips: Can substitute mayo with whipped dressing.   Ingredients: 1/4 cabbage 1 tbsp salt 2 carrots 1 small apple 3 cloves garlic 1/4 tsp cayenne pepper 1/3 cup fermented bean curd 100 ml apple cider vinegar 2 tbsp sesame oil Instructions: Coarsely chop 1/4 head cabbage, core an apple Put cabbage in a bowl and add 1 tbsp salt. Mixing until cabbage softens. Let sit 30 min In a food processor, add rest of indredients: 2 carrots, 1 apple, 3 cloves garlic, 1/4 tsp cayenne pepper, 1/3 cup fermented bean curd, 100 ml apple cider vinegar, and 2 tbsp sesame oil.   Ingredients: 1 turkey breast 1 cup cranberries 1/4 cup sugar 1/2 cup orange juice 1 packet of onion soup mix Directions: In a saucepan, add 1 cup cranberries, 1/4 cup sugar, 1/2 cup orange juice, and enough water to just cover the cranberries (If you are using canned cranberries, omit sugar and water, stir together cranberries, orange juice and 1 packet onion soup mix and skip to step 6) Bring to a boil, then reduce to a simmer until the cranberries burst Add 1 packet of onion soup mix, stirring until combined Cook for another five minutes Put sauce into fridge for two hours to set Set slow cooker to slow.   Ingredients: 1/2 cup butter 1 cup sugar 2 eggs 1 tsp salt 2 cups buckwheat groats 1 tsp baking soda 1 cup chocolate chips Instructions: Preheat oven to 350 F, line baking sheet with parchment paper Blend 2 cups buckwheat groats until turned into a sort of flour. I used the pulse setting on a food processor Brown 1/4 cup butter by cooking in a frying pan at a low heat, stirring consistently While butter is browning, in a mixing bow stir together buckwheat flour, 1 cup sugar, 2 eggs, 1 tsp salt, and 1 tsp baking soda Add browned butter to mixture. Melt the other 1/4 cup butter and add as well. I just used the same heated pan without waiting long enough for it to brown. stir together until blended Mix some of the chocolate chips into the batter but reserve most of it.
