Tonkatsu Sauce

Ingredients: 2 tbsp tomato paste 1 tbsp oyster sauce 1 tbsp rice wine vinegar 1 tbsp soy sauce 1 tbsp Worcestershire sauce 1 tbsp brown sugar Instructions: In a small bowl, whisk together all ingredients (2 tbsp tomato paste, 1 tbsp oyster sauce, 1 tbsp rice wine vinegar, 1 tbsp soy sauce, 1 tbsp Worcestershire sauce, 1 tbsp brown sugar) until it reaches a liquid state. The rice wine vinegar should break down the tomato paste, which is the most solid substance of the ingredients Yield: About a half cup of sauce Source: My mother-in-law Description: Originally the instructions to make this were incorporated into my okonomiyaki post. I thought it might be worth its own entry as I've got a "dips and sauces" section in my hard copy of this blog which it fits right into. It's also a general enough condiment that it shouldn't be limited to okonomiyaki. Okonomiyaki (Cabbage Pancakes)

  Ingredients: 1 bag coleslaw mix, approx 6 cups 1 bunch green onions 1/2 cup flour 1/2 cup breadcrumbs 1 tsp kosher salt 1/2 cup broth 5 eggs Canola oil Sesame oil (optional) 2 tbsp tomato paste Tonkatsu sauce, for garnish Japanese mayo, for garnish Pickled ginger, for garnish Nori, for garnish Sesame seeds, for garnish Instructions: Dice 1 bunch green onions In large bowl, toss together 6 cups coleslaw mix, diced green onions, 1/2 cup flour, 1/2 cup breadcrumb, 1 tsp salt, 1/2 cup broth, and three eggs. Set aside for 10 min to hydrate Bring a cast iron pan to medium heat Add a little canola oil and sesame oil to heated pan Spoon approx half the batter into the pan, flattening it into a pancake Cook for 4 min, or until golden and crisp Slide pancake from pan onto an oven-safe surface, like a pizza pan Place cast iron pan overtop the pancake and in one motion, flip over the pizza pan with the cast iron so that the uncooked side of the pancake lands facing down Fry for another 4 min...

Blueberry Banana Oatmeal Cups

  Blueberry Banana Oatmeal Cups Ingredients: 1 cup blueberries 2 bananas 2 cups oats 2 eggs 1 cup brown sugar 1 tsp baking powder 1 tsp vanilla extract 12 muffin liners Instructions: Preheat oven to 425 F Line muffin pan with 12 liners In a mixing bowl, mash 2 bananas with fork Beat in 2 eggs, 2 cups oats, 1 tsp baking powder, 1 cup brown sugar, 1 tsp vanilla extract, and 1 cup blueberries Add batter to muffin liners and bake for 15 min Yield: 12 cups Source: WALES Cookbook Tips: I wasn't sure if having overripe bananas was beneficial, like it is with banana bread, so I let ours get a little spotty but not to the point of turning brown, to hedge my bets. Original recipe called for rolled oats, but I don't know what that means. We have three types of oats at home and none of them claim to be rolled. I used large flake. Morning Ham & Egg Cups

Ingredients: 8 eggs 1 cup milk 1 cup grated cheddar cheese Diced ham to preference Salt & pepper to taste Instructions: Preheat oven to 350 F Grate 1 cup cheddar cheese, dice a slice of ham Crack 8 eggs into large bowl and beat Add grated cheddar, 1 cup milk, and salt and pepper to taste, stirring to combine Prepare muffin tray by greasing with butter/margarine, cooking spray, or using muffin liners Ladle egg mixture into muffin tray Add diced ham to preference Bake for 35 min Special Equipment: Muffin tray Yield: 12 egg cups Source: WALES Cookbook Tips: This makes enough to fill each muffin section to the brim. They expanded more in the oven than I thought they would, so try to give them a little space to grow. For the ham, I got one of those little ones from the grocery, cut off a thickish slice and diced it. It didn't take much, as the sections were already pretty full. Meat & Spinach Cannelloni

Ingredients: 4 garlic cloves 1 onion 1 carrot 1 rib celery 1 28 oz can crushed tomato 3 cups broth, matching protein or choice of preference 1/2 tsp thyme 1/2 tsp oregano 1/2 tsp salt 1 tsp pepper 1/4 tsp chili flakes 1 lb ground meat, chef's choice is beef but we used turkey 250 grams frozen spinach. If it helps, that came out to five "spinach portions" for us 1 tsp Worcestershire sauce 2 cups mozzarella or ricotta 220 grams cannelloni noodles, about 1 box Parsley for garnish, optional Little bit of cooking oil Special Tools:  Piping bag or ziplock sandwich bag Tinfoil Immersion blender Directions: Thaw, then squeeze water from 250 grams frozen spinach and set aside Mince 4 cloves garlic, dice 1 onion, chop 1 carrot and 1 rib celery. Slow Cooker Ribs

Ingredients: 2 cups bbq sauce 2 tsp brown sugar 3 cloves garlic 2 tsp Worcestershire sauce 1 tsp cayenne pepper 4-5 lbs baby back ribs Cooking spray Special Tools: Slow cooker Large ziplock freezer bag Directions: Mince 3 cloves garlic In a large ziplock freezer bag, combine 2 cups bbq sauce, 2 tsp brown sugar, minced garlic, 2 tsp Worcestershire sauce, 1 tsp cayenne pepper Seal bag and knead to mix ingredients Add 4-5 lbs baby back ribs to freezer bag. Reseal and shake to thoroughly coat with marinade Spray inside slowcooker and add ribs, topping with half the remaining sauce Cook on high heat for 5 hours, or low for 9 hours Yield: 4-5 lbs of ribs. Tuna Melts

  Ingredients: 1 can tuna 1 med pickle 1 heaping spoonful mayo 2 English muffins 4 processed cheese slices Black pepper to taste Instructions: Set oven to broil at med-high heat Drain 1 can of tuna and put into bowl Dice 1 med pickle Add diced pickle to bowl with tuna, along with a heaping spoonful of mayo and black pepper to preference Mix until integrated, adding more mayo if needed Cut 2 English muffins in half and set on a baking sheet facing up Spoon out tuna mix onto each English muffin half, distributing evenly Place a slice of processed cheese on each and place in oven Broil for 10 min, or until the cheese develops leopard spotting Yield: 4 tuna melts Source: Conventional knowledge Tips: Can substitute mayo with whipped dressing. Huángjīn Pàocài (Golden Pickled Cabbage)

  Ingredients: 1/4 cabbage 1 tbsp salt 2 carrots 1 small apple 3 cloves garlic 1/4 tsp cayenne pepper 1/3 cup fermented bean curd 100 ml apple cider vinegar 2 tbsp sesame oil Instructions: Coarsely chop 1/4 head cabbage, core an apple Put cabbage in a bowl and add 1 tbsp salt. Mixing until cabbage softens. Let sit 30 min In a food processor, add rest of indredients: 2 carrots, 1 apple, 3 cloves garlic, 1/4 tsp cayenne pepper, 1/3 cup fermented bean curd, 100 ml apple cider vinegar, and 2 tbsp sesame oil. Ingredients: 1/3 cup extra virgin olive oil 3 tbsp lemon juice 1 garlic clove 1/2 tsp salt 1/4 tsp ground coriander Pinch of cinnamon 3 cups curly parsley 1 cucumber 1 tomato 1 cup quinoa 1/3 cup mint 2 green onions Instructions: If using a rice cooker, add 1 cup quinoa, 2 cups water and set to cook. Ingredients: 2 cups dry pasta, shape of your choosing 2 heads of broccoli 1 onion 8 oz, or 1 package mushrooms. Original recipe calls for cremini, but can substitute 4 cloves garlic 3 tbsp flour 1 cup chicken stock 1 1/2 cups milk 1 tsp Dijon mustard 2 cups sharp cheddar cheese 2 chicken breasts Salt and pepper to taste Cooking oil for frying Instructions: Set saucepan of salted water to boil While waiting, dice 1 onion, mince 4 cloves garlic, chop 2 heads of broccoli, slice 1 package mushrooms, grate 2 cups cheddar, and cube 2 chicken breasts Once saucepan is boiling, add 2 cups dry pasta A little before pasta is cooked through, add broccoli to boiling water and cook until colour deepens Drain and set aside Set oven to 400 F to preheat  Coat a large frying pan with a little cooking oil and bring to medium heat Add diced onion and cook until semitranslucent Add mushrooms and garlic and fry until mushrooms are cooked through Add chopped chicken and fry until cooked through One by on...

  Ingredients: 2 cups flour 3 tsp baking powder 3/4 tsp salt 1/4 tsp pepper 1/3 cup oil 1 cup milk 1/3 cup butter 2 chicken breasts 1 onion 3 cloves garlic 3 cups chicken stock 1 cup peas 3  med ribs celery 2 med carrots Instructions: At 350 F, bake 2 chicken breasts in oven for 1 hour While baking, chop 1 onion, 3 cloves garlic, 3 ribs celery, and 2 carrots In a saucepan, saute onion in a little bit of cooking oil until semitranslucent Add garlic and cook until fragrant Add carrots, celery, 1 cup peas and 3 cups chicken stock,  Let simmer until chicken has been in oven for 1 hour Remove chicken from oven, coursely chop and add to pot Stir together, then place in casserole dish Increase oven temp to 450 F For tea biscuits, sift together 2 cups flour, 3 tsp baking powder, 1/4 tsp salt In a separate bowl, add 1/3 cup neutral oil, 1 cup milk Mix together, knead dough, flatten and turn into rounds using a mug/can/mason jar Add tea biscuit rounds on top of mix Bake for 15 min ...

Lonely Boss Turkey For One

  Ingredients: 1 turkey breast 1 cup cranberries 1/4 cup sugar 1/2 cup orange juice 1 packet of onion soup mix Directions: In a saucepan, add 1 cup cranberries, 1/4 cup sugar, 1/2 cup orange juice, and enough water to just cover the cranberries (If you are using canned cranberries, omit sugar and water, stir together cranberries, orange juice and 1 packet onion soup mix and skip to step 6) Bring to a boil, then reduce to a simmer until the cranberries burst Add 1 packet of onion soup mix, stirring until combined Cook for another five minutes Put sauce into fridge for two hours to set Set slow cooker to slow.   Ingredients: 1/2 cup butter 1 cup sugar 2 eggs 1 tsp salt 2 cups buckwheat groats 1 tsp baking soda 1 cup chocolate chips Instructions: Preheat oven to 350 F, line baking sheet with parchment paper Blend 2 cups buckwheat groats until turned into a sort of flour. I used the pulse setting on a food processor Brown 1/4 cup butter by cooking in a frying pan at a low heat, stirring consistently While butter is browning, in a mixing bow stir together buckwheat flour, 1 cup sugar, 2 eggs, 1 tsp salt, and 1 tsp baking soda Add browned butter to mixture. Melt the other 1/4 cup butter and add as well. I just used the same heated pan without waiting long enough for it to brown. stir together until blended Mix some of the chocolate chips into the batter but reserve most of it.   Ingredients: 1 onion 1 clove garlic 2 carrots 1 bell pepper 1 rib celery 1 lb stewing beef 1/2 cup flour 6 cups beef broth (1 tetra pack should be fine) 1 can diced tomatoes 1 cup barley 1 tbsp Worcestershire sauce 1/4 tsp thyme 2 tbsp parsley 1/4 cup cornstarch Bit of cooking oil Salt and pepper to taste 2 tbsp red wine optional Instructions: Chop 1 onion, mince 1 clove garlic, slice two carrots and 1 rib celery, dice 1 bell pepper Add 1/2 cup flour to a bowl.
