Tzatziki From Mediterranean Table


Ingredients:
  • 1/2 English cucumber
  • 1/2 tsp salt
  • 1 1/2 cups plan Greek yogurt
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 tbsp white vinegar
  • 1 tbsp dill

Instructions:
  1. Grate 1/2 English cucumber and mince 2 cloves garlic
  2. Place grated cucumber in a strainer. Sprinkle in 1/4 tsp salt and toss to combine. Leave in drainer for 20 min
  3. While waiting for the cucumber to dehydrate, in a large bowl mix together 1 1/2 cups Greek yogurt, 2 tbsp olive oil, 1 tbsp white vinegar, the minced garlic, and 1/4 tsp salt
  4. Once grated cucumber has dehydrated, finish draining by squeezing out the water. Can use cheesecloth or clean dish towel if desired
  5. Add grated cucumber and 1 tbsp dill to yogurt mix, stirring to combine
Yield: One giant dinner bowl of tzatziki

Description:

I don't usually include the source in the title. I did for this one because I've already done a post for a tzatziki recipe. To be honest, this one isn't substantively different from the last, but I still wanted to do it because the other one was just ripped from a top result on Google. If I recall, it was from Love and Lemons. Nothing against them, but I prefer to source things from less easily ready material. It just makes this blog feel a little more curated.

Probably the biggest difference between the two of them is that this one made a massive amount. Like, so much that if one were to eat a meal of just straight tzatziki it would still be too much. The Mediterranean Table seems to make large quantities.
