Chicken Gyros
Chicken Gyros
Ingredients:
- 1 med cucumber
- 1 pint grape/cherry tomatoes
- 1 small red onion
- 1/3 cup flat-leaf parsley
- 1/4 cup mint
- 1/2 head iceberg lettuce
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup olive oil
- 1 tsp dried oregano
- 2 garlic cloves
- 4 pocketless pita rounds
- 2 boneless, skinless chicken breasts
Instructions:
- Dice 1 med cucumber, 1 small red onion, quarter 1 pint cherry/grape tomatoes, chop 1/4 cup flat-leaf parsley, 1/4 cup mint, and 1/2 head iceberg lettuce
- Place prepared veg in a salad bowl. Add 1/2 tsp lemon juice, 1/4 tsp salt, 1/4 tsp pepper and toss to combine
- Preheat broiler and a frying pan to med heat
- Dice 2 cloves garlic
- Add 2 chicken breast to frying pan with a little bit of oil and cook until done and remove from heat
- In a small saucepan, over med-high heat add 1/4 cup olive oil, 1 tsp oregano, minced garlic, 1/4 tsp salt and 1/4 tsp pepper. Stir consistently for about 2 min or until garlic is fragrant. Remove from heat
- Shred chicken if it has cooled enough
- In a bowl, toss together shredded chicken with 3 tbsp of the garlic-herb oil
- Brush 4 pocketless pita rounds with remaining garlic-herb oil
- Cover with tinfoil and broil for about 4 min
- Remove foil and continue to broil bread for about 2 more in, until it begins to brown in spots
- Dollop some tzatziki on bread rounds (2 recipes available on this blog as of this posting. Can use store bought), top with chicken and salad
Yield: 4 gyros with salad left over

When I think of gyros, I think of marinated shaved beef, which this is not. It was slightly odd that half the recipe was a salad. Also, I expected the pita rounds to be more malleable. The broiling process stiffened them.
The Mediterranean Diet is supposed to be nutritious by nature not design. However, occasionally the source of this recipe will stray from tradition slightly for the purpose of health, as I believe it has done here.
If someone gave me this dish without explanation and asked me to tell them what it was, I might say something like "chicken flatbread with chopped salad" instead of gyros. It still tasted good, just don't expect the traditional experience if you try this one.
