Morning Ham & Egg Cups



Ingredients:

  • 8 eggs
  • 1 cup milk
  • 1 cup grated cheddar cheese
  • Diced ham to preference
  • Salt & pepper to taste
Instructions:
  1. Preheat oven to 350 F
  2. Grate 1 cup cheddar cheese, dice a slice of ham
  3. Crack 8 eggs into large bowl and beat
  4. Add grated cheddar, 1 cup milk, and salt and pepper to taste, stirring to combine
  5. Prepare muffin tray by greasing with butter/margarine, cooking spray, or using muffin liners
  6. Ladle egg mixture into muffin tray
  7. Add diced ham to preference
  8. Bake for 35 min
Special Equipment: Muffin tray

Yield: 12 egg cups

Tips:

This makes enough to fill each muffin section to the brim. They expanded more in the oven than I thought they would, so try to give them a little space to grow.

For the ham, I got one of those little ones from the grocery, cut off a thickish slice and diced it. It didn't take much, as the sections were already pretty full. I think it was easier to add it after ladling the egg mixture, as I imagine otherwise the ham would sink to the bottom of the mixing bowl, making it harder to distribute.

I'm making a cookbook for my workplace, the WALES Group. This involves collecting signature recipes from various members, this being one of them.

I've been intermittent fasting lately, which means I haven't been eating breakfast. Recently I heard that some of my medication should be taken with protein, so I'm playing with morning foods again. When I saw this recipe, I thought it would be a quick, clean protein hit that I could make quickly and in bulk to be available throughout the week. So far I've only tried it once, but it seemed to do its job.
