Tuna Melts

 

Ingredients:

  • 1 can tuna
  • 1 med pickle
  • 1 heaping spoonful mayo
  • 2 English muffins
  • 4 processed cheese slices
  • Black pepper to taste
Instructions:
  1. Set oven to broil at med-high heat
  2. Drain 1 can of tuna and put into bowl
  3. Dice 1 med pickle
  4. Add diced pickle to bowl with tuna, along with a heaping spoonful of mayo and black pepper to preference
  5. Mix until integrated, adding more mayo if needed
  6. Cut 2 English muffins in half and set on a baking sheet facing up
  7. Spoon out tuna mix onto each English muffin half, distributing evenly
  8. Place a slice of processed cheese on each and place in oven
  9. Broil for 10 min, or until the cheese develops leopard spotting
Yield: 4 tuna melts

Tips:

Can substitute mayo with whipped dressing. In my opinion, there is no situation in which it's preferrable to mayo, but this is a recipe that is a little more forgiving of it.

The use of pickle in tuna is apparently debatable. It seems like the natural pairing, but Lee-Anne grew up using celery in its place. She has since become a pickle convert.

On the other hand, I used to just make it on bread, and she has convinced me that English muffins are the preferred vehicle in this case.

Mozzarella can be used instead of processed cheese, as it melts and develops leopard spotting in a similar way.

Description:

Realistically speaking I'm not likely to ever revisit this recipe. Similar to my fried rice, it's just a little too intuitive for formal instructions. However, I felt like including it just as a reminder of something that we make semi-frequently and in the spirit of completionism.

This is a go-too when neither of us know what to make for dinner. It's quick, simple, and the ingredients are easily accessible. Even if we don't have everything at home, a local convenience store is only a couple minutes away with everything we need. Plus, tuna is a good source of omega 3.
