Cheeseburger Casserole



Ingredients:

  • 1/2 med yellow onion
  • 2 cups sharp cheddar cheese
  • 1 tbsp cooking oil
  • 1 lb ground beef
  • Cooking oil for frying
  • 1 1/2 tsp onion powder
  • 2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 carton/4 cups beef broth
  • 1 can diced tomatoes
  • 2 1/2 to 3 cups dried elbow macaroni
Instructions:
  1. Dice 1/2 med onion, grate 2 cups cheddar cheese
  2. Preheat oven to broil on med heat
  3. Heat a bit of cooking oil in a large-sided skillet
  4. Add diced onion and cook until semitranslucent
  5. Add 1 lb ground beef, breaking into smaller pieces
  6. Season with 1 1/2 garlic powder, 1 tsp salt, 1/4 tsp pepper
  7. Continue to flip to distribute the seasoning until beef is cooked through, about 6 to 7 min
  8. Add 2 tbsp tomato paste and 1 tbsp Worcestershire sauce, stirring to combine until tomato paste darkens, about 1 min
  9. Add 1 carton or 4 cups beef broth, 1 can diced tomatoes, 1 tsp salt, 1/4 tsp pepper. Stir to combine and bring to a boil
  10. Once boiling, add 3 cups dried elbow macaroni. Stir occasionally until noodles are tender, about 10 min
  11. Remove from heat and add 1 1/2 cups grated cheddar, stirring to combine. Taste and add salt and pepper to preference
  12. Transfer to a casserole dish and top with remaining grated cheddar cheese
  13. Broil uncovered in oven until cheese topping has browned, 2 to 3 min
Yield: A big casserole pan worth of food

Tips: 

I committed my usual food crime by substituting the ground beef with ground chicken. To keep it consistent, I used chicken broth instead of beef as well. Worked fine for us, even though it does kind of take one of the signature ingredients out of the recipe
