Coffee Cake
- 2/3 cup brown sugar
- 2 cups all purpose flour
- 2 1/2 tsp cinnamon
- 1 cup butter
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 3/4 cup sugar
- 2 eggs
- 2 1/2 tsp vanilla extract
- 1/2 cup sour cream
- 1/4 cup milk
- 1 cup icing sugar
Instructions:
- Preheat oven to 350F, grease or line cake pan with parchment paper
- In a medium bowl, mix together 2/3 cup brown sugar, 3/4 cup flour, 2 1/2 tsp cinnamon. Cut in 1/2 cup chilled butter until mix is pea-sized crumbs. Refrigerate
- In a large bowl, whisk together 1 1/4 cups flour, 1 tsp baking powder, 1/4 tsp baking soda, and 1/4 tsp salt
- In another bowl, with a hand mixer, beat together 1/2 cup room temp butter, 3/4 cup sugar on high until smooth and creamy, about 3 min
- Add 2 eggs and 2 tsp vanilla extract and beat on med-high until combined, then add 1/2 cup sour cream and do the same
- Add flour mixture to the wet ingredients and beat on low until combined, then beat in 2 tbsp milk
- Spread 1/2 of the batter onto prepared cake pan, top with 1/2 of the crumb mixture from the fridge, then spread the remaining cake batter, then top with remaining crumb mixture
- Bake 25-40 min or until done, testing by inserting a toothpick and seeing if it comes out clean. Allow 15 min to cool after coming out
- While cake is baking, whisk together 1 cup icing sugar, 1/2 tsp vanilla extract, and 2 tbsp milk. Drizzle over warm cake

Description:
The original recipe had extremely specific amounts for the ingredients, and they were divided into categories. The way I do it here, the ingredients section is for checking to see if you have it at home, and then the instructions include the quantities needed. So I had to add together the ingredients that repeated between the categories, and because it was so specific I approximated the amounts. Hopefully this recipe is still usable.
Lee-Anne made this to share at my workplace for a conversation group. I really wanted one of the guys there to try it, because he runs a coffee group where he makes treats and it seemed perfect. But he'd never had it before.
A fun fact is that coffee cake is not meant to taste like coffee, it's supposed to go well with it. It's actually more of a layered cinnamon cake with brown sugar topping. Despite the slightly complex recipe, the end result was well received.
