French Onion Soup



Ingredients:

  • 6 large onions, about 3 lb
  • 4 tbsp cooking oil
  • 2 tbsp butter
  • 1 tsp sugar
  • 2 cloves garlic
  • 8 cups stock, any kind
  • 1/2 cup dry white wine
  • 1/2 tsp thyme
  • 2 bay leaves
  • 1/2 tsp pepper
  • 2 tbsp brandy (optional)
  • 1 baguette
  • 1 1/2 cups Gruyere cheese
  • Grated Parmesan, to preference
  • Salt, to preference

Instructions:

  1. Peel, halve, and cut 6 large onions into strips, mince 2 cloves of garlic. Cut baguette into 1-inch slices, and grate 1 1/2 cups Gruyere cheese
  2. In a large pot, heat 3 tbsp oil over med. Add onions and toss to coat
  3. Cook onions, stirring frequently, until softened. About 15 to 20 min
  4. Increase heat to med-high. Add remaining tbsp oil and 2 tbsp butter
  5. Cook, stirring frequently, until onions have browned. Between 20-40 min
  6. Sprinkle 1 tsp sugar and 1 tsp salt into the pot. Cook until the onions have finished caramelizing, about 10-15 min
  7. Add minced garlic and cook 1 more min
  8. Add 1/2 cup dry white wine. To deglaze, scrape the browned bits on side and bottom of pot
  9.  Add 8 cups stock (2 tetra packs), 1/2 tsp thyme, and 2 bay leaves
  10. Bring to simmer, reduce heat to low, cover and maintain simmer for about 30 min
  11. Season with salt to preference, add 1/2 tsp pepper, 2 tbsp brandy if using. Discard bay leaves
  12. While soup is simmering, line sheet pan with parchment paper or foil and preheat oven to 450 F
  13. Brush both sides of the baguette slices with olive oil
  14. Toast in oven until slightly brown, about 5 to 7 min
  15. Turn slices over, sprinkle with grated Gruyere and return to oven. Bake until cheese is bubbly and lightly brown
  16. To serve, ladle soup into bowls and top each with 1 slice of cheesy toast

Description:

This is one brother made. Since my mom broke her knee, we've been having a lot of meals together. Because of this, I've lapsed into familiar recipes that are good as bulk meals instead of experimenting with new things. This is my 112th post, but I'm still only at 97 that I've done personally. 98 if you consider the second tzatziki recipe. Really wanting to be able to say I've personally made 100 dishes, just three more to go!
