Chicken Gyros Ingredients: 1 med cucumber 1 pint grape/cherry tomatoes 1 small red onion 1/3 cup flat-leaf parsley 1/4 cup mint 1/2 head iceberg lettuce 1/2 tsp salt 1/2 tsp black pepper 1/4 cup olive oil 1 tsp dried oregano 2 garlic cloves 4 pocketless pita rounds 2 boneless, skinless chicken breasts Instructions: Dice 1 med cucumber, 1 small red onion, quarter 1 pint cherry/grape tomatoes, chop 1/4 cup flat-leaf parsley, 1/4 cup mint, and 1/2 head iceberg lettuce Place prepared veg in a salad bowl. Add 1/2 tsp lemon juice, 1/4 tsp salt, 1/4 tsp pepper and toss to combine Preheat broiler and a frying pan to med heat Dice 2 cloves garlic Add 2 chicken breast to frying pan with a little bit of oil and cook until done and remove from heat In a small saucepan, over med-high heat add 1/4 cup olive oil, 1 tsp oregano, minced garlic, 1/4 tsp salt and 1/4 tsp pepper. Tzatziki From Mediterranean Table

Ingredients: 1/2 English cucumber 1/2 tsp salt 1 1/2 cups plan Greek yogurt 2 cloves garlic 2 tbsp olive oil 1 tbsp white vinegar 1 tbsp dill Instructions: Grate 1/2 English cucumber and mince 2 cloves garlic Place grated cucumber in a strainer. Sprinkle in 1/4 tsp salt and toss to combine. Leave in drainer for 20 min While waiting for the cucumber to dehydrate, in a large bowl mix together 1 1/2 cups Greek yogurt, 2 tbsp olive oil, 1 tbsp white vinegar, the minced garlic, and 1/4 tsp salt Once grated cucumber has dehydrated, finish draining by squeezing out the water.
