Thompson Family Broccoli Salad
Ingredients:
- 1 bunch broccoli
- 1/2 cup chopped red onion
- 1 cup grated cheddar
- 1/2 cup cunflower seeds
- Miracle whip, enough to combine
- 1/2 cup bacon bits (optional)
Instructions:
- Finely chop 1 bunch broccoli and 1/2 cup red onion. Grate 1 cup cheddar
- Add broccoli, red onion, cheddar, 1/2 cup sunflower seeds, and optional 1/2 cup bacon bits to mixing bowl
- Mix, adding enough miracle whip to make everything stick together
Yield: Enough for a potluck

This is one that Lee-Anne made. She did it for a potluck that my organization was hosting. It went over well, and by the end of the evening the entire salad had been consumed. We avoided using the bacon bits, as that would restrict some people from eating it.
This recipe from her mother calls for Miracle Whip, which is neither mine nor Lee-Anne's preference. I only recently realized that it's supposed to be a diet version of mayo in the same way that margarine is for butter. But Miracle Whip is so sweet that it doesn't give the impression of any health benefits.
When I saw that it was a "salad dressing" instead of a "sandwich topper", I tried it on some leafy green salads and was confused. Turns out it's salad dressing for things like potato or macaroni salad. Weird that we define things as a "salad" based in whether or not they need more greens or more white paste.
I tried it with potatoes and honestly, while it seemed more appropriate, it still felt like traditional mayo would do a beter job. Anyway, this is a good recipe. It gets away with Miracle Whip but maybe you should sub with regular mayo
We brought it in a mixing bowl to the function, but it didn't look great. So for this picture we posed it in a little porcelain bowl.
