Jambalaya
Ingredients
- 2 boneless, skinless chicken breasts
- 1 lb sausage. Chef's choice is andouille sausage, we substituted with Polish sausage
- 1 lb shrimp (used about half a bag)
- 2 tbsp cajun seasoning
- 1/2 tsp red pepper flakes
- 1 cooking onion
- 2 bell peppers
- 2 ribs celery
- 1 jalapeno pepper
- 4 cloves garlic
- 1 cup okra
- 1 1/2 cups long grain white rice
- 15 oz crushed tomato (about half a standard can where we're from)
- 3 cups chicken stock
- Cooking oil
Directions:
- Prep work: chop 2 chicken breasts, 1 lb sausage, and deveinn 1 lb shrimp. Dice 1 onion, 2 bell peppers, 4 cloves garlic. Slice 2 ribs celery, 1 jalapeno pepper, 1 cup okra
- Heat a little bit of cooking oil in a large saucepan. We used a wok
- Toss chicken pieces in 1 tbsp of cajun seasoning and put into heated saucepan
- Cook through, remove and put chicken on plate
- Add sausage, cook through, remove and place with cooked chicken
- Add onion, bell pepper, jalapeno, and celery. Saute for 5 min
- Add minced garlic, 1 tbsp cajun seasoning, and 1/2 tsp red pepper flakes. Stir together for 30 sec
- Add 1 1/2 cups rice, 3 cups chicken stock, 15 oz, or 1/2 can crushed tomatoes
- Bring to a boil, reduce to low, cover and let simmer for 8 min
- Add shrimp and 1 cup sliced okra
- Cover and turn off heat. Shrimp will cook through in about 5 min

Tips:
I made the mistake of using the rice I had on hand, which was long grain brown. Because of this, I had to let it simmer for a lot longer than usual.
I went out of my way to buy okra just for this dish, but when I finally made it I forgot to add it! Very upsetting. Kept it in the recipe here because it seemed kind of integral
We substituted the andouille sausage with Polish sausage which might be a food crime, but we couldn't find andouille around here

My mom has been staying with us since the house she and my brother lived in was lost to a fire. Back at their old place, I remembered seeing that they had jambalaya written as a dish to try. I had figured that this was Mom's request, since she was born in Nashville Tennessee. Even though she moved to Canada as a young child, apparently those American taste buds kick in fast, and she credits the Southern US as one of her favourite food cultures
However, I sent a pic of the dish to my brother, who is staying with his partner. Apparently they had jambalaya recently as well. So now I think the request may have come from him, having got a taste for it on one of his adventured South of the border
