Caribbean Rice & Beans

 

Ingredients:

  • 1/4 cup canola oil
  • 3 cloves garlic
  • 1/2 med onion
  • 2 tsp cajun seasoning
  • 2 cups long grain rice
  • 1 tsp thyme
  • 1 can coconut milk
  • 1 can red kidney beans
  • 2 bay leaves
  • 2 1/4 cups chicken broth
  • 1 hot pepper
  • 1 tsp paprika
  • salt and pepper to taste
Instructions:
  1. Wash rice until water runs clear and drain
  2. Dice 1/2 med onion, 3 cloves garlic, and 1 hot pepper
  3. Heat a saucepan with oil to medium heat
  4. Add 1 tsp thyme, diced onion, garlic, and hot pepper. Saute until onion is semitranslucent
  5. Stir in 2 cups rice, 1 can red kidney beans and cook for 2 min
  6. Add 1 can coconut milk, 2 bay leaves, 2 tsp cajun seasoning, 2 1/4 cup chicken broth
  7. Bring to a boil, lower heat, cover and let simmer 20 min
  8. Add salt and pepper to taste, stir consistently to prevent burns
Yield: Big pot of rice & beans

Description:

Original recipe called for creole seasoning. I used cajun because it's all I could find. Original recommended pepper was scotch bonnet, but I just used a hot pepper I had available. You might notice there are extra veg in the pic. That's because Lee-Anne told me to throw in some mixed frozen veg.

Yeah, might have commited some food crimes with this one. Definitely the version I turned out wasn't authentic.

At some point in the past I watched a documentary called "rice and beans" which claimed that these were the staple foods of the world. Because it's cheap and we're trying to reduce our meat consumption, we've bean doing a rice and beans dish per week. Due to being the global food staples, there's a ton of regional variations
