Crispy Basa and Homemade Tartar Sauce

 Ingredients: 1 basa fillet Neutral oil (veg, sunflower, grapeseed, peanut) Breadcrumbs Salt and pepper to taste 1/4 cup mayo 1 tbsp mustard 1 small pickle, diced 1 tsp bbq sauce (or ketchup) 1/4 tsp hot sauce 1/4 tsp paprrika Tinfoil Directions: Preheat oven to 375 F Dice pickle Brush basa fillet with neutral oil Combine breadcrumbs with salt and pepper Sprinkle breadcrumb mixture onto both sides  Bake for 15 min While waiting, combine 1/4 cup mayo, 1 tbsp mustard, 1 diced pickle, 1/4 tsp hot sauce, and 1/4 tsp paprika Serve fish with sauce drizzled on top Yield: 1 fillet Source: My mother's kitchen cupboard Description: Awhile back I copied a bunch of my mother's recipes, which she has on sticky notes on the inside of a cupboard door in her kitchen. Butter Chicken

  Ingredients: 2 tbsp butter 1 onion 2 tsp garlic (2 cloves) 1 tbsp grated ginger 1 tsp chili powder 1/2 tsp turmeric 1/4 tsp ground cinnamon 1 can diced tomatoes (I use crushed tomatoes) 2 tbsp tomato paste 1 tbsp brown sugar 1/2 tsp salt 1/4 tsp black pepper 2 chicken breasts 1/3 cup cream 1/4 cup sour cream or plain yogurt 1 cup basmati rice Instructions: Prepare rice in rice cooker or pot While it's cooking, chop 1 onion, dice 2 tsp garlic, grate1 tbsp ginger Mix 1 tbsp ginger, 1 tsp chili powder, 1/2 tsp turmeric, and 1/4 tsp cinnamon in a bowl and set aside Chop up 2 chicken breasts into cubes Pan fry cubed chicken breasts until cooked through and set aside Melt 2 tbsp butter in a deep skillet over medium heat Add onion and garlic to skillet Cook, stirring frequently until onions are tender, about 5 min Add spice blend, mix, and cook for another minute Add 1 can of diced or crushed tomatoes, 2 tbsp tomato paste, 1 tbsp brown sugar, 1/2 tsp salt, 1/4 tsp black pepper Mix until...
