Clementine Cake

 

Ingredients:

  • 5 clementines
  • 6 eggs
  • 1 cup, 2 tbsp sugar
  • 2 & 1/3rd  cup ground almonds
  • 1 tsp baking powder

Special Equipment: Food processor. Can finely chop by hand, alternatively 

Instructions:

  1. In a pot, cover 5 clementines with water and bring to a boil
  2. Let boil for 2 hours
  3. Once done, allow to cool, then cut in half and remove seeds
  4. In a food processor, finely chop the clementines, including skin, pith, and fruit
  5. Preheat oven to 375 F
  6. Grease and line 8-inch pan with parchment paper
  7. In a bowl, beat 6 eggs
  8. Add 1 cup, 2 tbsp sugar, 2 and 1/3rd cup ground almonds, and 1 tsp baking powder to the beaten eggs and mix
  9. Add chopped clementines and stir until integrated
  10. Pour mix into prepared pan and place in oven for 40 min
  11.  Cover the cake with foil and bake an additional 20 min

Yield: 1 cake

Description:

We finally had that Moroccan-themed potluck that I've mentioned in several previous posts. I made preserved lemon spiced chickpeas, and this clementine cake was Lee-Anne's contribution. As it turns out, it was a personal favourite of one of the people there. Apparently there's a movie where a guy bribes his way into a bunch of places by offering a clementine cake.
