  Ingredients: 12 lasagna noodles 2 cans crushed tomatoes (796 ml each) 1 can tomato paste (156 ml) garlic 1 lb ground meat (chef's choice would be beef, but can substitute) 1 onion 1 bell pepper 2 tbsp minced garlic 1 tbsp rosemary 1 tbsp oregano 2 cups milk  1/4 cup flour  1/4 cup butter 1/2 jar grated parmesan 1/2 bar mozzarella 1 tub ricotta Directions: Blend together 1/2 jar grated parmesan, 1/2 bar mozzarella, 1 tub ricotta in a bowl Whisk together 1/4 cup flour and 1/4 cup butter in a saucepan for 4 min Add 2 cups milk while whisking, let simmer until thickened, approx 20 min Preheat oven to 375 F While waiting for roux to thicken, dice 1 onion, 1 bell pepper, mince 2 tbsp garlic Grill onion and garlic in frying pan with a little bit of oil for 3 min Add 1 lb ground meat and diced bell pepper to frying pan, fry until meat is cooked through Add 2 cans crushed tomatoes and 1 can tomato paste to frying pan Add 1 tbsp rosemary and 1 tbsp oregano to meat sauce, stir to ...

Black Bean Burgers

Ingredients: 2 cans black beans 1 1/2 cups breadcrumbs 2 eggs 1 onion 1/2 tsp chili powder Instructions: Preheat oven to 375 Drain and rinse 2 cans black beans Dice 1 onion Put black beans on a baking tray and bake for 15 min to dry them. Leave oven on After beans have dried, put them in a bowl and mash them.   Ingredients Cooking oil 2 tbsp all-purpose flour 1/4 cup chili powder 1/2 tsp garlic powder 1/2 tsp cumin 1/4 tsp oregano 2 cups chicken or veg stock 1 onion 1 1/2 lb boneless skinless chicken breast 1 4-oz can diced green chiles 1 15-oz can black beans 8 tortillas 3 cups Mexican-blend grated cheese Instructions for Sauce: Heat 2 tbsp oil in small saucepan over medium-high heat Add 2 tbsp flour and cook for 1 min, whisking continually Add 1/4 cup chili powder, 1/2 tsp garlic powder, 1/2 tsp cumin, 1/4 tsp oregano, cook for 1 min, whisking continually  Gradually pour in 2 cups stock, whisking until no lumps remain, cooking until sauce reaches a simmer Reduce heat to medium-low, let simmer for 10-15 min uncovered to let it thicken a bit Season with salt to preference (rec 1/2 tsp) Instructions for Enchiladas: Preheat oven to 350 F Chop chicken and onion, grate cheese Heat 2 tbsp oil in frying pan, then cook diced onion for 3 min Add diced chicken and 4 oz can diced green chile...
