Latkes/Potato Pancakes
Ingredients:
-8 potatoes
-1 onion
-1 carrot
-1 cup flour
-2 eggs
-1 cup vegetable oil
-Salt and pepper to taste

Instructions
-Grate potatoes and carrot
-Dice onion
-Combine
-Add one cup flour
-Add 2 eggs, salt and pepper to taste
-Form into patties
-Place in heated pan until browned, then flip
-When browned on both sides, they are ready to serve
Description
A few days ago was the first day of Hanukkah, and even though me and Lee-Anne are not Jewish, we took this opportunity to prepare something Hebrew-inspired.
Last time I tried this dish was from an online source claiming to be a hashbrowns recipe. This is definitely not hashbrowns, and definitely potato pancakes.
Some time before this, however, I attempted the "Home for the Challah-days Burger" from the Bob's Burgers cookbook. This recipe required me to make some latkes and top them on the burger. The only real difference between the Bob's Burgers "latkes" and the online "hashbrowns" recipe is that the latkes included a carrot and the hashbrowns used flour.
For this recipe, I'm including both carrot and flour.
I made these for two people, which came out to eight patties. The original recipe I found made four patties. So if you're just making this for yourself, just halve the ingredients. The original recipe told me to use "two medium potatoes", but I always only had small potatoes, so I had to use four.
This recipe assumes that you have small potatoes like me, but if you have larger ones, just try to use your own judgement to make sure you have the right amount. If the eggs and flour can hold the patties together, your latkes should come out alright.
Some food just isn't photogenic, and admittedly, this includes latkes. However, some of the ugliest food can taste the most delicious. I'm looking at you, lasagna, chili, and mushroom soup.
