Pumpkin Tarts

Ingredients:

  • 30 tart shells
  • 2 eggs
  • 1 1/2 cups canned pumpkin (or pumpkin pie filling)
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp cloves
  • 1 1/4 cups evaporated milk
  • Whipped Topping

Yield: 30 tarts

Instructions:

  1. In a large bowl, beat 2 eggs
  2. Add 1 and 1/2 cups canned pumpkin, 1/2 cup sugar, 1/4 tsp salt, 1 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp ginger, 1/4 tsp cloves, 1 and 1/4 evaporated milk, blend until mixed
  3. Put tart shells on a cookie sheet, you may need two
  4. Spoon about 1/4 cup pumpkin filling into each tart shell
  5. Bake at 375 F for about 30 min
  6. Remove and add a dollop of whipped dressing to each if you like

Description:

It's almost October, and with the changing season comes cravings for everything pumpkin flavoured. These are good for potlucks, and are usually more popular than another type of tart that I make, a personal favourite, which I'll post later.

You could probably put the filling in pie shells and get full sized pumpkin pies, but for some reason, I always go for tarts. A little less awkward to pick up in a line at a potluck.

To be honest, I just used pre-made tart shells from the frozen section of my local grocery. My family is traditionally phobic of making pie crust, as it can be notoriously tricky. One day, I'll figure it out and post it here under its own entry.
